| Dried Plum-Pecan Bread |

1 1/3 cups pitted dried plums |
| |
3/4 cup prune juice |
| |
1/3 cup water |
| |
2 teaspoons grated orange peel |
| |
1 cup toasted wheat germ |
| |
3/4 cup whole wheat flour |
| |
1/2 cup unbleached all-purpose flour |
| |
2/3 cup packed brown sugar |
| |
1 teaspoon baking powder |
| |
1/2 teaspoon baking soda |
| |
1/2 teaspoon salt |
| |
2 large egg whites |
| |
1/2 cup chopped pecans |

Directions:
Heat oven to 350 degrees. Lightly coat 8 1/2 x 4 1/2 inch loaf pan with cooking spray; set aside. In small saucepan, bring dried plums, prune juice and water to a boil. Transfer dried plum mixture to food processor or blender; process until smooth. Stir in orange peel and set aside. In large bowl, combine wheat germ, flours, brown sugar, baking powder, baking soda and salt; stir to blend thoroughly. Mix in dried plum mixture, egg whites and pecans until thoroughly blended. Spread batter in pan; bake in center of oven about 50 minutes or until wooden pick inserted in center comes out clean. Cool in pan 10 minutes. Turn onto rack to cool completely.
